Food is the center of attention at Thanksgiving.  The Pilgrims worked hard to make the new world their home, and this was their celebration.  It’s a pretty standard menu.  Pumpkin pie ends a turkey dinner that includes all the extras.  History aside, families also like to get everyone together in one room.  But just like the colors of the leaves, Thanksgiving dinner recipes can be an amazing variety.

Why not try the following appetizer?  Move the pumpkin from the pie to the soup.  Add butter and oil to a pan over medium heat. Add three sliced leeks (only the white) and saute until the leeks are soft. Add 15 ounces of pumpkin puree, a pinch of cloves, one tablespoon of ground cinnamon, one teaspoon of ground ginger, and a pinch of salt.  Stir that until well mixed, then pour in 32 ounces of vegetable broth. Stir in one quarter cup of brown sugar.  Use low heat to simmer it for 10 minutes. Cream or half and half are optional, along with a pinch of cinnamon on top of each bowl.  That soup is a real treat.

For the main course try frying the turkey instead of broiling it.  Don’t worry, fried turkey isn’t greasy.  The oil can’t penetrate the skin after the hot oil sears it.  Get a big drum and a propane burner, otherwise known as a deep fryer.  Check the meat with a meat thermometer and the oil temperature with an oil thermometer.  Hot oil may spatter so do this in an open outdoor space.  Get that oil hot, up to 350F.  It’s finished cooking when the breast measures at 170F, which will take about three minutes per pound.  It’s common to inject spices into the turkey during frying, but the dressing is usually not fried along with the turkey.

Try hazelnut pumpkin soup or a butternut squash stuffing.  The list of delicious appetizers is endless.  Give cheese wrapped asparagus a try.  Use two cheeses, one spread and one sliced.  One idea is swiss cheese slices with a softer blue cheese spread.  Spread the soft cheese on the slices, wrap it around a few asparagus spears, then cook in a 230 degree C oven for about 15 minutes, or until the asparagus is soft.  The asparagus prepared this way loses its health appeal.  Thanksgiving is a time for a little fun.  So live it up.
